Hey Friends!

It has been too long since we have posted. Karen and myself are hoping to change that. I have been working on a bunch of new recipes I`d love to tell y’all about. This one is a family favorite in our house.

Shepherds Pie I have been on my healthy journey for a few years now. My passion for cooking has just grown. I love trying to transform our comfort foods into healthy kid approved meals. I am big on batch cooking and being about to freezing leftovers for one of our busier nights.

This recipe is a fav because it`s packed with vegetables. Please feel free to substitute with this recipe. If you have frozen vegetable add them at the end of sauteing the other vegetables. Some people prefer half cauliflower half potato for the mashed. Go for it! .Get crazy and do a sweet potato mashed instead. You can really make this one your own and I`d love to hear how you tweek it.

Shepherd`s Pie

Looking for a low carb option for dinner that the whole family will like.  Look no further this recipe for shepherd`s pie  is perfect. This recipe is also paleo and whole 30 approved. The base is also freezer friendly and this recipe is done for bulk cooking. Hope you enjoy!

  • 3 lbs Extra Lean Ground Beef
  • 2 tbsp Avocado Oil
  • 1 cup Diced Onion
  • 1.5 cup Diced Celery
  • 1 cup Chopped Green Beans
  • 4 cloves Garlic
  • 2 cups Bone Broth
  • 2 cups Water
  • 1 tbsp Pepper
  • 0.5 tbsp Salt
  • 0.5 tbsp Dried Parsley
  • 2 tbsp Arrowroot Flour
  • Mashed Cauliflower
  • 1 tsp Paprika
  1. Brown the beef and drain off the grease.

  2. Chop all veggies and saute them with the oil and garlic in a large pot for 5 minutes.

  3. Add beef with the veggies, bone broth and water including pepper, salt and parsley.

  4. Bring this to a boil then lower the heat and simmer for 30 mins to 45 mins.
  5. You would like the liquid to reduce to how much gravy you would like.

Mix the arrowroot flour with about ½ cup cold water.

Bring beef mixture to a boil and add the arrowroot flour mixture.

This will thicken your gravy for the base of your shepherd`s pie.

  6. Taste and see if you need more pepper, salt or maybe garlic powder.

  7. Separate the base in half. You can freeze half of this for another day. It is best to freeze without mashed cauliflower. Make a fresh batch the day you defrost and follow the same instructions as below,

  8. Cook up a batch of cauliflower mashed. If you need a recipe for that please check out Stupid Easy Paleo`s recipe here.

  9. Portion out into individual dishes or oven safe dish for the rest of the base you are not freezing.

  10. Scoop cauliflower mashed on top and sprinkle with paprika.

Bake at 350 for about 30 minutes or until base is bubbly.

    Enjoy!
